Fast Dinner Fix - Puff Pastry Parcels

Well, I am always one in favour of a fast fix when it comes to dinner, one that doesn't involve take away OR frozen food, but fresh and tasty.

I have a few tried and true recipes that I fall back on regularly. This one is too easy! All you need is some puff pastry and a filling of your choice. My first experimentation was with chunky cubes of ham (we were using up the last of a leg ham) and cubed tasty cheese. You could cut slices of ham into strips and use grated cheese to make it quicker, it's very versatile.

I worked on one parcel each for the kids and two for teens/adults. So, one sheet of pastry will yield 2 parcels.

PUFF PASTRY PARCELS
(Makes 12 parcels)

Ingredients:
1 packet of Puff Pastry (Aldi or home brand does the job!)
3 cups grated cheese
3 cups diced or shredded ham
1 egg, beaten) for glaze

Steps:
1. Pre-heat oven to 180 degrees celsius (fan forced), line baking trays with baking paper, allow pastry sheets to come to room temp (when able to fold easily)
2. Mix your filling together in a mixing bowl until evenly combined.
3. Lay out a sheet flat on clean surface, using a knife, run a dividing line down the middle so you see two equal rectangles.
4. Dip a pastry brush into the beaten egg and 'paint' a 2cm border around the edges of each triangle.
5. Working with one rectangle, spoon a two generous tablespoons of filling onto the MIDDLE of the bottom end.
6. Fold the top half onto the bottom half, covering the filling and make sure all the straight edges meet.
 

7. Use a fork to seal the edges together (finished product will look like picture)



8. Brush parcels with egg wash, place onto tray and bake in oven for approximately 15-20 minutes (check regularly after ten minutes)
9. Serve with sides of choice eg salad, mashed veg, chips etc.
